Countdown to Cabo

It's been a busy few days getting ready to leave for Cabo. In lieu of my departure (Sunday at 10:30am - but whose counting really?) I am leaving you with this recipe for homemade tortilla chips, which I hope to be eating poolside with margaritas, of course!

Homemade Tortilla Chips

Corn tortillas
Vegetable oil
Chili Powder
Garlic Salt
Pretty much any other spices you like
Parchment paper or foil

Pre-heat over to 375 degrees. Using a pastry brush, lightly coat each side of a corn tortilla with oil. Stack and cut into 8 pieces. Place chips on a cookie sheet lined with foil or parchment paper (whatever you've got handy). Season chips with chosen spices. Bake for 10 minutes, remove from oven, turn 'em all over then bake for an additional 7 minutes. Remove from oven and serve!
